Kuribayashi Brewing in Senboku, Akita Prefecture, crafts Harukasumi using Akita water, Akita rice, and the hands of Akita brewers, a trilogy the brewery treats as inseparable from the sake's identity. The brewery draws from Rokugo spring, one of the top 100 fountains of Japan and a celebrated water source in an area once known as the water village. Harukasumi is a participant in the Next Five collaboration, a collective of five Akita breweries that has brought international attention to the distinctive sake culture of the prefecture.
