Gasanryu is produced by Shindo Sake Brewery in Yonezawa, Yamagata Prefecture, a brewery whose origins trace to the Meiji period and whose current brand was launched in 1997 by president Masanobu Shindo. The name draws from a Zen concept meaning mountain flow, expressing the aim to brew with free and unrestrained thinking. The brewery grows Dewasanzan rice on its own fields and draws deep groundwater from the Azuma mountain system, pursuing a refreshingly clean style that avoids fatigue across multiple cups.
