Uyofukutsuru is produced by Shindo Sake Brewery, a brewery with over ten generations of history in Yonezawa City, Yamagata, situated at the foot of the Azuma mountain range where pristine snowmelt water flows at high speed. The brewery sources all its ingredients locally, including water, rice, koji, and yeast, and aims to express the character of each ingredient with clarity and a touch of playfulness. Shindo's sake has earned top honors at the International Wine Challenge in London and gained a following internationally for its clean, fresh profile that pairs broadly with both Japanese and international cuisine.
