Chikubushima is produced by Yoshida Shuzo, founded in 1877 in Makinocho Kaizu, Takashima City, Shiga Prefecture, on the shore of Lake Biwa, and named after the island in the lake venerated as a divine dwelling. The brewery has adhered to Kanazawa yeast since its early years, producing sake with a distinctive acidity and refined aroma, and its core philosophy is unpretentious, full-bodied, with a clean finish. Chikubushima draws its brewing water from the Chinai River, a clear stream flowing through the Kohoku highlands into the lake.
