Komon honjozo from Yoshida Shuzo on the shores of Lake Biwa in Shiga, brewed with gold Kanazawa yeast that produces strong acidity and a refined aroma alongside a firm, bold palate. Long a fixture for local celebrations, it is recommended at a light warm temperature to bring out the deep umami characteristic of this lakeside brewery.
