Junmai Ginjo at 60% polish brewed with Koshi Tanrei rice at Yukitsubaki Shuzo in Kamo, Niigata, an all-junmai brewery since 2011. Low-temperature fermentation delivers a fine-grained umami and vivid nose characteristic of the brewery's tanrei umakuchi philosophy.
