This limited Kawatsuru Junmai is produced via funashibori direct-press from the tank (jikagumi) and bottled muroka namagenshu, meaning it is unfiltered, unpasteurized, and undiluted. The combination of fune pressing, which collects sake with minimal force for maximum delicacy, with the raw genshu bottling creates a sake of striking intensity and fresh, unmediated vitality.
