
Founded in 1891 in Kanonji on the Sanuki coast of Shikoku, Kawatsuru takes its name from the crane the founder saw descend to the pristine Saita River, a water source so prized locally it is called the treasure river. A sixth-generation family brewery committed to quality over volume, Kawatsuru has dramatically scaled back production to focus on premium expressions. This tokubetsu junmai features Sanshu Oseto, a traditional Shikoku rice variety polished to 55%, combined with local Sanuki olive yeast. Rich, textured, and built for food: grapefruit brightness, full rice body, soft sweetness, and a refreshing dry finish.
