Koshitanrei is a Niigata-bred sake rice registered in 2007 after 18 years of development, crossing Gohyakumangoku and Yamadanishiki to produce a grain suited to the prefecture's cold climate and capable of polishing to levels comparable to Yamadanishiki. Aoki Shuzo uses this local variety in this Tokubetsu Junmai to express a clean, rounded flavor profile that connects Kakurei's house style to Niigata's ongoing investment in its own regional sake heritage.
