
Aoki Shuzo has brewed sake in Shiozawa, Minamiuonuma, since 1717, in one of Japan's snowiest and coldest brewing regions, where deep winter snowfall and the pure meltwater of the mountains have shaped the brewery's identity for three centuries. Yukiotoko, Snow Man, is the brewery's dry, accessible honjozo: Gohyakumangoku and Koshi Ibuki rice polished to 65%, brewed with mountain snowmelt water and bottled at an SMV of positive eight for a firmly dry profile. The taste is clean, precise, and cold-clear, embodying what Aoki Shuzo calls tanrei-umakuchi: the full, clean umami of good rice carried within a dry, light, quintessentially Niigata body.
