这是出于想要酿造一款能搭配公司进口的塔纳拉产顶级生火腿的酒而诞生的,是一款口味独特且实验性的作品。这是首次将通常用于葡萄酒的苹果酸乳酸发酵(MLF)技术应用于日本酒的尝试。MLF是将酒精中的苹果酸转化为乳酸的发酵过程,由此使酒的口感变得非常圆润。此外,乳酸是一种温热时更加美味的优质酸,加热饮用时也可以享受到别样的风味。虽然基本上希望精心酿造能充分感受米鲜味的正统酒款,但同时也想创作富有趣味的实验性作品。
