这是1907年(明治40年)由阿部亀次在山形县余町培育并推广的品种。使用了阿部亀次直系后代阿部幸助亲自分种、在山形县余町栽培的原料米酿制而成。虽是古老品种,没有华丽感,但带有泥土韵味的低沉厚重口感是其特征。即使长期熟成,也不易产生异味。几年前开始同时准备生酿造和生两种版本,最终得出生的版本更能展现个性的结论。古法是否只适用于古老品种呢?
