From Toshimaya Shuzo, founded in 1596 in Edo and one of Tokyo's oldest active breweries, the Okunokami Junmai Nakadori applies a precision technique rarely seen in unpasteurized sake: the press is divided into three sections, and only the nakadori, the middle cut drawn freely without force before pressing begins, is bottled. This middle fraction carries none of the harshness from the head or the heaviness from the tail. Hattannishiki from Hiroshima polished to 55%, bottled nama and unadjusted, delivers a fresh, fruity fragrance, a creamy texture, and a palate where tart and savory notes meet in clean, rounded harmony.
