Oeyama Koijikaigan is brewed by Matsunami Sake Brewery (est. 1868) in Noto Town, Ishikawa, the birthplace of the legendary Noto toji master brewer lineage. Using soft well water and locally grown Gohyakumangoku rice, this expression from the storied Noto Peninsula delivers a clean, light umami and crisp finish characteristic of the region's cold-climate brewing tradition.
