Junmai daiginjo made from Dewa Kirari rice polished to 50% under the Tenkasosei label at Eau de Vie Shonai in Sakata. Dewa Kirari at the daiginjo level produces a sake with deep umami, a pleasant lingering finish, and an aromatic profile suited to chilled service in a wine glass.
