Honjozo made from Miyama Nishiki rice polished to 70%, bottled as a genshu (undiluted) with the label Shimenomi Gokukaragenshu indicating an extremely dry character. Higher alcohol from the undiluted pressing reinforces the dry, assertive finish that defines this bracing, food-cutting style.
