Hida Homare milled to 55% is fermented into a junmai ginjo named Hanakaze at this Gifu brewery. Hida Homare, a sake rice developed specifically for Gifu's mountainous Hida region in 1972, is grown locally and contributes a clean grain character to the ginjo profile.
