Kawatsuru Sinmaisinsyu Siboritate is a freshly pressed junmai new-season sake made from the year's first rice harvest at 70% polishing. Once-pasteurized to lightly set the flavor, it retains the bright, water-fresh character of shinmai rice alongside clean acidity and lively umami.
