岩瀨酒造创业于享保八年(1723年),自大正时代起专注于清酒酿造,1947年荣获全国清酒品评会首席奖,现任第11代当主。酒藏距海岸约10分钟,地下水穿过贝壳层,硬度极高,富含钙和镁,发酵旺盛,形成浓郁而带有酸味的风格。为充分发挥米的风味,酒藏坚持"山废"酿造法,约三分之二的产量采用山废仕込。
