Hanazakari Junmai Gohyakumangoku Sasayuri is brewed with Gohyakumangoku rice, a variety registered in 1957 and prized for producing clean, light, and slightly dry sake, at Hanamori Shuzo's Yaotsu Town brewery in Gifu. The brewery, led by fifth-generation president Eiji Kani, uses the traditional slow-drip bag-hanging method and a manually operated press, the last of its kind in Japan, to extract the sake with minimal pressure. 'Sasayuri' (lily of the valley) suggests a floral delicacy befitting this carefully produced junmai.
