Hattan Nishiki polished to 55% is pressed at the nakagumi (middle run) stage of the press to extract only the cleanest, most balanced portion of the moromi. This muroka genshu junmai ginjo from Enoki Shuzo in Kure, Hiroshima is bottled unfiltered and undiluted, with a peachy aroma and layered acidity that deepens with each sip.
