Cold storage maturation without pasteurization (nama chozo) allows this yamahai junmai from Uehara Shuzo in Shiga to deepen in flavor before bottling. The brewery's house-cultivated wild yeast and kioke tenbin wooden-vat pressing technique underpin a sake of characteristic richness and natural complexity.
