Brewed from aged sake produced in 1976 and combined with Fukui Prefecture Benisashi plums and rock sugar, this vintage koshu umeshu represents a rare expression from the mid-Showa era. Room-temperature maturation across five decades in the earthen-walled Gifu storehouse builds a deeply settled, rounded character in the base sake.
