Brewed from Hatsushimo rice polished to 70%, this junmai draws on a variety grown almost exclusively in Gifu Prefecture, prized for its rich grain sweetness. The soft subterranean water of the Mugi River underpins a rounded, umami-forward body characteristic of the Darumamasamune lineup.
