Fukui Prefecture Benisashi plums and rock sugar are steeped in 2001-vintage aged sake to create this koshu umeshu. The extended aging of the base sake imparts depth and roundness to the plum liqueur that would not be possible with a standard shochu-based umeshu, producing a flavor with greater breadth and less cloying sweetness.
