A junmai muroka nama from Gifu's Ibigawa Town, brewed with Akebono rice as koji rice, polished to 65%. Based on the brewery's philosophy that sake is fundamentally a food companion, this unfiltered, unpasteurized expression offers punchy acidity, rice-forward umami, and a body suited to wide-ranging serving temperatures including warm.
