Founded in 1832 in Kurume, Fukuoka, Yamaguchi Sake Brewery named its Niwanouguisu brand after a warbler from the nearby Tenmangu shrine that would drink from the brewery's spring courtyard well, cleansing itself before its song. Using Fukuoka-grown Yamadanishiki and the locally developed Yumenikkon rice, the brewery aims for a fresh, balanced style with natural acidity and fruit, pursuing what it calls the ultimate goal of sake that makes you reach for another cup.
