Seiryo Syuzo, founded in 1877 in Saijo City, Ehime Prefecture — known as the city of water — brews Iyokagiya with the guiding philosophy that sake is made with dreams and heart, keeping food at the center of every design decision. The brewery draws its water from Mount Ishizuchi, the highest peak in western Japan, and uses locally cultivated Ehime rice varieties including Shizukuhime to express the character of the region. Iyokagiya is aged at low temperatures to develop umami depth, bottled without charcoal filtration, and pressed in small batches by hand-fire pasteurization.
