Tanaka Sake Brewery was established in 1899 in Otaru, Hokkaido, and remains the city's only sake brewery, having spent over 125 years preserving Otaru's local sake culture alongside the famous canal district. The brewery produces exclusively junmai sake using Hokkaido-grown rice and cold northern water, and Hokkaido's cool climate allows it to brew year-round, one of the few breweries in Japan able to do so. The concept of tema-hima, cycles of meticulous work and unhurried fermentation time, guides every stage of production.
