梅美人酒造由上田梅一於大正五年在愛媛縣八幡濱市創立,歷經105年傳承至今。八幡濱市在明治時代曾被稱為「伊予的大阪」,以港口商業繁盛著稱,酒藏建築被指定為國家登錄有形文化財產。目前第五代社長傳承了來自伊方杜氏的技術,堅持少量精心釀造,以品質為先。梅美人的日本酒來自伊予南部清澈、明朗、清新宜人的風土,酒藏從地下30米深的水脈中汲取中軟水井水,並配備低溫貯藏設施,以緩慢發酵的方式精心釀造。
