三千盛酒造位於岐阜縣中津川市。明治10年,庄屋第四代山田仙次郎在此地開創釀酒業,品牌名「三千櫻」由此而來。釀造用水取自自家山中湧出的清泉,為守護水源,酒藏不砍樹、不種植人工林,將水源地作為完全天然森林加以保護,致力於以堅信的方式進行清酒釀造。
