Yamada Nishiki rice polished to an exceptional 35% gives this Daiginjo from Kagawa's Nishino Kinryo a sharp, refined character. The shizukuzake (drip-pressing) method coaxes the clearest possible liquid from the moromi, yielding a crisp dry profile with an elegant ginjo fragrance.
