Kikuhanazakari Daiginjo Shizuku is the prestige offering from Hanamori Shuzo, produced by the gravity drip (shizuku) method under the Kikuhanazakari (chrysanthemum in full bloom) label that marks the brewery's top tier. The 1886-founded Yaotsu, Gifu, brewery employs bag-hanging drip extraction and the only manually operated Yaegaki-style press remaining in Japan, giving it a particular affinity for this no-pressure technique. Daiginjo polishing levels and the shizuku process together produce a sake of exceptional purity and aromatic refinement.
