Hanazakari Tokubetsu Junmai Shizuku is produced by the gravity-drip 'shizuku' method, in which the sake-filled bags are hung and the liquid falls freely one drop at a time without any pressing force whatsoever. Hanamori Shuzo in Yaotsu, Gifu, is uniquely positioned to produce this style, as the brewery's foundational method relies on slow, unpressured extraction through cloth bags, a technique it maintains while other breweries have shifted to mechanical presses. The result is exceptionally pure and delicate, with a silky mouthfeel and clean finish.
