Gohyakumangoku at 70% polishing is used for this dry honjozo from Sekaiitto, named after the historic Kishu Domain's famous 550,000-koku assessment. Water from the Kino River gives it a clean base, and the sake is known for a balanced, tanrei dry character with good sharpness, winning gold at the 2021 National Kanshu Contest in the hot sake category.
