Hatsushibori (first-of-season pressing) Zuisho is bottled as an unpasteurized junmai namazake at 60% polish, capturing the raw, lively character of new sake straight from the year's initial pressing. The brewery uses Fukushima-grown Miyama Nishiki and Utsukushima yeast, yielding a fresh, fruit-forward sake with the natural energy of unheated new-season rice wine.
