Honkin Hinokuchi is a honjozo from Sakenunoya Honkin Shuzo in Nagano's Suwa region, polished to 60%. The Suwa area is distinguished by Kiri-no-Mine cold mountain air and spring water from the Kirigamine highlands, qualities that shape the brewery's clean, crisp sake style.
