Ginjo nama genshu (unpasteurized, undiluted) brewed from Miyama Nishiki polished to 59% at this Nagano kura in the Suwa region. As an unfiltered, undiluted namazake, it retains the freshness and vivid rice character of new sake. The ginjo polishing and clean Tateshina spring water contribute a crisp dryness and delicate aroma alongside the bold, concentrated texture of genshu.
