Washinoo is produced by Washinoo Co., Ltd., a brewery founded in 1829 in what is now Hachimantai City, Iwate Prefecture, at the foot of Mt. Iwate, whose peak snow formation in early spring resembles an eagle spreading its wings, giving the brand its name. The brewery draws on clear spring water from the mountain's foothills and upholds a sake-making philosophy rooted in connection to water, rice, people, and place. Roughly 90% of production is consumed within Iwate Prefecture, reflecting the deeply local character of this long-established jizake.
