Shoki is brewed by Syoki Shuzo (笑亀酒造), a brewery in Shiojiri, Nagano Prefecture, located along the historic Nakasendo post road. The brewery is known for an unconventional approach that incorporates miso koji, which has higher protease activity than standard sake koji, into its brewing process, producing sake with a deeper, more complex finish than conventionally brewed sake. This blend of Shinshu tradition and deliberate experimentation defines Shoki's character within Nagano's established sake landscape.
