初喜酒造於明治16年（1883年）創立於塩尻宿舊址，專門使用以縣內本地產塩尻宮山錦為主的宮山錦，堅持釀造充分發揮米香風味的清酒。酒藏重視創業以來的風土與氣候，致力於打造符合當地食材的地方清酒，主建築、穀倉與倉庫均被列為登錄有形文化財。

Founded in 1883 (Meiji 16), the brewery is built on the former site of the Shiojiri-juku magistrate's office (daikansho) along the Nakasendo highway.
