Kanei Brewing Company has been operating in Hadano, Kanagawa, since 1868, drawing on the underground spring water of the Tanzawa mountain range, which has twice been recognized as the best drinking water in Japan by the national environmental agency. The brand name Shirasasazutsumi was inspired by the rustling of bamboo grass at the nearby Shirasasa Inari Shrine, likened to the sound of a drum. Under the sixth-generation owner, the brewery pursues what it calls brewing sake for the future, including producing koji that has been played Mozart music during fermentation.
