Brewmaster Mitsuri Okazaki, who studied at Tokyo University of Agriculture, crafts clear sake using Nagano rice varieties. Their "Shinshu Kirei Junmai Hitogokochi" is a dry sake that pairs well with richly flavored dishes and is also enjoyable when warmed.
