Shikino is crafted by Shotoku Shuzo (招徳酒造), a brewery founded in 1645 in Kyoto that relocated to the famed water-rich Fushimi district in the early Taisho period and became a founding member of the Pure Japanese Sake Association in 1973. Committed entirely to junmai brewing using only rice, koji, and water, the brewery draws ultra-pure soft water from over 70 meters below its plant, and all rice comes from fields cultivated specifically near Kyoto.
