Sakagurahonkakujikomi

Sakagurahonkakujikomi is produced by Shimazaki Shuzo, established in 1849 in Nasukarasuyama, Tochigi Prefecture, along the Naka River at the base of Mount Nasu. The brewery is best known in Japan as a pioneer of cave-aged sake, storing premium bottles at a steady 10°C in a wartime tunnel carved into a nearby hillside, and produces sake across a wide range of styles from fruity junmai to sharp dry and mellow nigori.
