Ohashi Shuzo, founded in 1908 in Nakatsugawa City, Gifu Prefecture, brews Kasagitsuru with a stated aim of crafting 'deeply flavored, gentle sake that everyone can enjoy.' The flagship 'Maboroshi no Sake' is made entirely by hand using Hida Homare rice polished to high levels, a brewery-secret process producing what the brewer describes as 'ajiginjyo,' a flavor-focused style of ginjo. The brewery also appeared in the final scene of the beloved film series 'Otoko wa Tsurai yo.'
