Daikoku Masamune is produced by Yasufuku Matashirou Shouten, one of the smallest sake breweries in Nada, Kobe, where it has brewed sake by hand in small batches since 1751 using the renowned Miyamizu brewing water and Hyogo-grown Yamadanishiki rice. The brand name draws on Daikokuten, the god of wealth and prosperity, and the brewery positions all its sake around the concept of sake that enhances the dining experience. Based in the Mikage area of the Nada Gogo, Yasufuku maintains fully handcraft production without automation in an era dominated by large industrial brewers.
