니가타현 남부의 쓰난초는 폭설 지역으로, 기리노토(안개 탑) 등 해발 2,000m급 산에 내린 눈이 수원이 되어 '일본 명수 100선'에 선정된 풍부하고 맑은 물이 흐릅니다. 이 천연 용천수는 초연수로, '입자가 고운 부드러운 물'이라 불리며 양조용수로 사용됩니다. 1996년 주조 쌀 농가, 지자체, JA가 함께 창업한 지역 목소리로 탄생한 주조장으로, 쓰난초 지역 농가가 재배한 주조 쌀 '고만고쿠'를 원료로 얼굴이 보이는 쌀로 빚습니다.
