Yamada Nishiki polished to 40% positions this Ujisato-ko expression in the junmai daiginjo tier at Suehiro Shuzo in Aizu Wakamatsu, Fukushima. Suehiro's yamahai heritage, tracing back to the Kagi-shiki yamahai method pioneered at the brewery in the early Taisho era, informs the house style. The brewery was founded in 1850 and draws on Aizu spring water and contracted local rice farming.
