
Shibata Brewery, established in 1830 in Okazaki, Aichi, at 350 meters elevation, is one of very few Japanese breweries led by a female toji. The water source, called Kanzui, is a sacred spring rated among the softest in Japan at just 0.2 degrees of hardness: water so delicate that it shapes everything it touches toward finesse rather than force. Akikaze, autumn wind, is pressed in spring and tank-aged through summer before seasonal release. The slow maturation rounds and settles the sake's character: a restrained, elegant aroma with soft fruitiness and a calm, smooth texture that carries the season's name in every sip.
